Chettinad Chicken Curry

Chettinad Chicken Curry originates from southern India, specifically the Chennai region, formerly known as Madras. It features numerous regional variations, reflecting the home-cooked nature of Indian cuisine rather than strict recipes. The dish can be made with vegetables or meat, using locally available ingredients. Typically, dried and roasted spices are sautéed in ghee or vegetable oil, then combined with fresh ingredients such as garlic and ginger, along with vegetables or meat. Tamarind, lemon juice, or vinegar are added to achieve a tangy, sweet, and sour flavor profile. Just before serving, fresh coriander is sprinkled on top. Some versions may include spices like cloves, bay leaves, fenugreek, and allspice. The vibrant red color of the curry comes from chili or chili-paprika mixes, while turmeric adds an orange hue. Additional acidity can be introduced with lemon, lime, or vinegar. The curry is distinguished by its toasted spices, fruity tamarind notes, hints of licorice from anise, and a complex blend of sweet, savory, and earthy flavors. 

To prepare Chettinad chicken curry, start by gathering a blend of spices typical of the region. Roast dried chilies, coriander seeds, cumin, and fennel seeds either in the oven at 180°C for about 10 minutes or dry-fry them in a pan over low heat until fragrant. Once cooled, grind these roasted spices using a mortar and pestle or a coffee grinder. Mix the ground spices with turmeric, and set aside. In a pot, heat oil and sauté chopped onions, garlic, and ginger until golden. Add chopped tomatoes and cook until soft. Incorporate the ground spice mixture, along with fresh curry leaves and chopped coriander, then add chicken pieces. Cook until the chicken is tender and the flavors meld. This method yields an authentic Chettinad chicken curry with rich and aromatic flavors.
