The roots of Rogan Josh reflect the historical spice and trade connections between ancient Persia, Central Asia, and the Kashmir Valley.
Deciphering the Name: The name derives from the Persian words Rogan (meaning clarified butter, ghee, or oil) and Josh (meaning passion, intense heat, or boiling). Thus, "Rogan Josh" translates directly to meat simmered in hot ghee until the spiced oil separates and floats elegantly to the surface.
The Royal Wazwan: The dish was perfected by Kashmiri royal chefs (Wazas). A traditional Wazwan is a multi-course feast of up to 36 dishes, prepared almost entirely around fresh mutton or lamb, where Rogan Josh serves as a centerpiece course.
